It's here! It is August 3rd and it is NATIONAL WATERMELON DAY!! Watermelon has been a summer staple for as long as I can remember. Sitting on the back porch as a kid and eating giant slices of watermelon and then being sprayed off with the water hose. We'd add it to fruit salads, juice it, or just eat a slice of it with a little bit of salt sprinkled on top. So good.
I don't know about you guys but some cold watermelon on a hot day is one of the best snacks around! AND, there's a ton of different recipes! I wanted to share a few of my favorites with you!
Watermelon Feta Salad
Ingredients:
~Diced watermelon
~Bite sized feta pieces
~Balsamic vinegar
~Mint
In a large bowl, mix together the feta and the watermelon. Drizzle with the balsamic vinegar and top with mint! Easy peasy and such a tasty treat!
Watermelon Pizza
Ingredients:
~ Watermelon
~ 1 cup of coconut or greek yogurt
~ 1/2 cups of your favorite berries (I use strawberries and blueberries. Cherries would also be great)
First, cut off a slice of watermelon that is a couple of inches thick. Next, spread your yogurt over the watermelon leaving the rim, or your crust, exposed. Then, layer your fruits a top the yogurt. Cut into slices and serve! Enjoy!
